Baby Marrow Soup

Ingredients
  

  • ½ onion chopped
  • 1 garlic clove chopped
  • 500 gm baby marrows cut into even slices
  • 500 gm chicken or vegetable stock
  • ½ tsp salt
  • 1 pinch ground pepper
  • 10 gm margarine
  • 40 gm cream cheese optional or ½ cream or Orley whip

Instructions
 

  • Heat oil in a pot and add onions and garlic sauté for around 5 minutes, don’t allow the onions to brown.
  • Add baby marrows, stock and seasoning. Cook on medium for 15 minutes
  • Add margarine and cheese or cream. Blend until smooth.
  • Adjust seasoning to taste.
