
Baby Marrow Soup
HOT OR COLD
Ingredients
- ½ onion chopped
- 1 garlic clove chopped
- 500 gm baby marrows cut into even slices
- 500 gm chicken or vegetable stock
- ½ tsp salt
- 1 pinch ground pepper
- 10 gm margarine
- 40 gm cream cheese optional or ½ cream or Orley whip
Instructions
- Heat oil in a pot and add onions and garlic sauté for around 5 minutes, don’t allow the onions to brown.
- Add baby marrows, stock and seasoning. Cook on medium for 15 minutes
- Add margarine and cheese or cream. Blend until smooth.
- Adjust seasoning to taste.
