Glazed Meat Loaf

This scrumptious recipe is very economical and makes use of leftover rice.

Ingredients
  

  • 400 ml Cooked rice
  • 500 grams Lean beef mince
  • 15 ml Soya sauce
  • 20 ml Tomato sauce
  • 2 Apples, peeled and grated
  • 150 ml Raisins
  • 250 ml Cheddar cheese, grated
  • 2 Eggs, lightly beaten
  • 2 ml Origanum
  • 2 ml Thyme
  • Salt and freshly ground black pepper

Glaze:

  • 50 ml Tomato sauce
  • 15 ml Soft brown sugar
  • 50 ml Fruit Chutney
  • 15 ml Worcestershire sauce

Instructions
 

  • Preheat the oven to 180 degrees celcius. Grease a loaf tin. If you are going to freeze it, then line it with foil.
  • Combine all ingredients in a Large mixing bowl.
  • Spoon into loaf pan, level with Paddle scraper.
  • Combine all ingredients for glaze in Quick shake. Shake well and spoon over meat mixture.
  • Bake for 50 to 60 minutes.

Notes

Prepare an extra meat loaf and freeze in a Stor-n-freeze container. Use foil lining to  transfer meat loaf from loaf pan to Stor-n-freeze container.
