
Glazed Meat Loaf
This scrumptious recipe is very economical and makes use of leftover rice.
Ingredients
- 400 ml Cooked rice
- 500 grams Lean beef mince
- 15 ml Soya sauce
- 20 ml Tomato sauce
- 2 Apples, peeled and grated
- 150 ml Raisins
- 250 ml Cheddar cheese, grated
- 2 Eggs, lightly beaten
- 2 ml Origanum
- 2 ml Thyme
- Salt and freshly ground black pepper
Glaze:
- 50 ml Tomato sauce
- 15 ml Soft brown sugar
- 50 ml Fruit Chutney
- 15 ml Worcestershire sauce
Instructions
- Preheat the oven to 180 degrees celcius. Grease a loaf tin. If you are going to freeze it, then line it with foil.
- Combine all ingredients in a Large mixing bowl.
- Spoon into loaf pan, level with Paddle scraper.
- Combine all ingredients for glaze in Quick shake. Shake well and spoon over meat mixture.
- Bake for 50 to 60 minutes.
Notes
Prepare an extra meat loaf and freeze in a Stor-n-freeze container. Use foil lining to transfer meat loaf from loaf pan to Stor-n-freeze container.
