Beef Stew

An easy Beef Stew recipe that serves 4-6.

Ingredients
  

  • 750 gm stewing beef or chuck cut into pieces
  • 1/4 cup flour
  • 6 very ripe tomatoes diced
  • 15 ml fresh basil chopped
  • 5 ml fresh rosemary chopped
  • 4 medium potatoes peeled and cut in 8ths
  • 1 cup frozen peas and carrots
  • 5 cups water
  • salt and pepper

Instructions
 

  • In a heavy pot toss the beef with flour. Stir in the tomatoes, basil and rosemary, about a tsp salt and 1/8 tsp pepper to taste, cook for about 15 minutes, add water and potatoes and cook till potatoes are almost soft. turn down the heat and simmer for 1 hour. Add peas and carrots and cook for a further 5-10 minutes. Turn off the heat and let stand for another 5 minutes before serving.
