Easy Curried Butternut Soup

An easy soup recipe with a slight kick.

Ingredients
  

  • 45 ml margarine
  • 2 onions sliced
  • 1 kg butternut sliced
  • 4 potatoes sliced
  • 5 ml salt
  • 15 ml curry powder
  • Water to cover

Instructions
 

  • Melt the margarine in a heavy bottom pot and fry your onion with the curry powder until lightly brown.
  • Add the butternut, potatoes, and salt and cover with water, bring to boil and then simmer until potato and butternut are soft.
  • Liquidize or blend the soup till smooth.
  • Just before serving I like to add some cream/ cream substitute
