Grilled Sole with Tomato Salsa

Ingredients
  

  • 4 Portions of sole
  • olive oil
  • Fish spice or spices of your choice
  • 125 gm cherry or Italian tomatoes quatered
  • 15 ml Honey
  • 15 ml Wholegrain mustard
  • lemon juice
  • 4 spring onions sliced
  • Fresh Coriander

Instructions
 

  • Brush your sole with olive oil and season to taste.
  • Chop a handful of Coriander leaves. Warm the olive oil and add the tomato, spring onion, honey, mustard, lemon juice and coriander into the warm oil and mix well.
  • Serve over your fish. I served it with a green salad and Basmati rice.
