
Grilled Sole with Tomato Salsa
This is a Sea Harvest recipe.
Ingredients
- 4 Portions of sole
- olive oil
- Fish spice or spices of your choice
- 125 gm cherry or Italian tomatoes quatered
- 15 ml Honey
- 15 ml Wholegrain mustard
- lemon juice
- 4 spring onions sliced
- Fresh Coriander
Instructions
- Brush your sole with olive oil and season to taste.
- Chop a handful of Coriander leaves. Warm the olive oil and add the tomato, spring onion, honey, mustard, lemon juice and coriander into the warm oil and mix well.
- Serve over your fish. I served it with a green salad and Basmati rice.
