shrimp
shelled, headed and deveined

mango
peeled and cut into cubes
1
avocado
peeled and cut into cubes
2
scallions
thinly sliced
1
small bunch cilantro
chopped
1/4
tsp
piment d’espelette
3
tbsp
lime juice
1
tbsp
sugar
2
tbsp
olive oil
Instructions
Place the shrimp, mango, avocado, scallions, cilantro and piment in a large bowl.
Whisk the lime juice, sugar and olive oil together.
Pour over the shrimp mixture and blend well.
Refrigerate for an hour and serve.
