Creamy Smoked Salmon and Pasta

A pasta recipe with a salmon twist.

Ingredients
  

  • 750 gm Giant Pasta Shells
  • 1 Tbs butter or 15mls oil
  • 1-2 garlic cloves crushed
  • 1 medium onion diced
  • Juice of 1 lemon or 2 tablespoons bought lemon juice
  • 250 gm of cream cheese mixed with 15ml fresh cream-optional
  • 400 gm smoked salmon off cuts.
  • Salt and black pepper to taste

Instructions
 

  • Boil pasta in either salt water or I add a teaspoon of chicken stock powder, until al dente (soft but still holds its shape)
  • Melt the butter or heat the oil in a very large pot, one big enough to add the pasta to afterwards for mixing. Fry the onion and garlic until soft and glassy.
  • Mix in the lemon juice
  • Add your cream cheese. Mix well.
  • Add your pasta and mix well until the shells are coated. Serve with a green salad.
