Homemade Mayonnaise

This is a tried and tested recipe of mine, that my family love!
Course Sauce

Ingredients
  

  • 2 eggs
  • 45 ml white vinegar
  • 10 ml white sugar
  • 5 ml salt
  • Black pepper to taste
  • 500-600 ml canola oil

Instructions
 

  • Into a running blender add everything except the oil. Mix well.
  • With the blender still running add the oil starting with a slow drizzle to a steady stream.
  • This is a relatively bland mayonnaise so if you want you can adjust it easily. I make double and keep 1 jar of bland and then add the other flavours into separate jars for the rest.
  • This is a thick mayonnaise which you can thin by adding a little hot water, milk, yoghurt, cream or sour cream.
  • To make a peri-naise add a little peri peri (not more than 2,5 ml)
  • To make garlic mayonnaise add 1-2 crushed garlic cloves
  • You can also use 1/2 vinegar, 1/2 lemon juice for another delicious taste.
