Mix together the eggs and sugar, then add the ricotta, lemon zest and juice.
In a separate bowl, sift the flour, baking powder and salt. Add this to the egg mixture and mix until smooth. .
Half-fill a pot or deep-fat fryer with oil and heat until oil gets to 180ÂșC. Drop 4-5 teaspoonfuls at a time in the hot oil and fry until golden brown. Remove and drain on paper towel. Dust with icing sugar and serve immediately.
