
Stuffed Gemsquash
Serve these gemsquash with green salad for a simple supper.
Ingredients
- 500 ml Cooked rice
- 15 ml Oil
- 1 Large onion, chopped
- 2 Carrots, chopped
- 500 grams Mince
- 20 ml Mild curry powder
- 2 ml Origanum
- 75 ml Tomato sauce
- 1 Beef stock cube
- 200 ml Water
- Salt and pepper to taste
- 6-8 Gemsquash, depending on size
Instructions
- Heat the oil and sauté the onions and carrots. Add the mince and fry until lightly browned.
- Stir in the curry powder and origanum.
- Add the rice, tomato sauce, beef cube and water. Reduce heat, cover the pan and cook gently for about 30 minutes.
- Halve the gemsquash, scoop out the seeds and put into a large pot of salted boiling water. Cover and cook for 10-15 minutes, or until soft.
- Season the mince and spoon into the gemsquash.
Notes
It's not much more work to make a triple the quantity of mince and freeze in Stor-N-Freeze containers, ready for lazy days.
