Stuffed Gemsquash

Gemsquash, depending on size
Instructions
Heat the oil and sauté the onions and carrots. Add the mince and fry until lightly browned.
Stir in the curry powder and origanum.
Add the rice, tomato sauce, beef cube and water. Reduce heat, cover the pan and cook gently for about 30 minutes.
Halve the gemsquash, scoop out the seeds and put into a large pot of salted boiling water. Cover and cook for 10-15 minutes, or until soft.
Season the mince and spoon into the gemsquash.
Notes
It's not much more work to make a triple the quantity of mince and freeze in Stor-N-Freeze containers, ready for lazy days.
