Stuffed Gemsquash

Serve these gemsquash with green salad for a simple supper.

Ingredients
  

  • 500 ml Cooked rice
  • 15 ml Oil
  • 1 Large onion, chopped
  • 2 Carrots, chopped
  • 500 grams Mince
  • 20 ml Mild curry powder
  • 2 ml Origanum
  • 75 ml Tomato sauce
  • 1 Beef stock cube
  • 200 ml Water
  • Salt and pepper to taste
  • 6-8 Gemsquash, depending on size

Instructions
 

  • Heat the oil and sauté the onions and carrots. Add the mince and fry until lightly browned.
  • Stir in the curry powder and origanum.
  • Add the rice, tomato sauce, beef cube and water. Reduce heat, cover the pan and cook gently for about 30 minutes.
  • Halve the gemsquash, scoop out the seeds and put into a large pot of salted boiling water. Cover and cook for 10-15 minutes, or until soft.
  • Season the mince and spoon into the gemsquash.

Notes

It's not much more work to make a triple the quantity of mince and freeze in Stor-N-Freeze containers, ready for lazy days.
