Pyramid Cheesecake

This tempting dessert will keep in a freezer for up to 3 months.

Ingredients
  

  • 125 grams Margarine
  • 125 ml Sugar
  • 1 Egg
  • 250 ml Smooth cottage cheese
  • 10 ml Vanilla essence
  • 1 pkt Tennis biscuits
  • 12-15 Cherries
  • 150 ml Sweetened whipped cream or icing
  • 1 Flake

Instructions
 

  • Cream margarine and sugar together in 2 L Mix-N-Stor. Add egg and beat well. Add cheese and vanilla essence. Mix well.
  • Take a large sheet of tin foil and place 3 biscuits across x 4 down (12 in total). Spread with half of cheese mixture.
  • Add another layer of biscuits (12) and spread with balance of the mixture. Place a row of cherries down the centre.
  • Using the tin foil, fold into a triangle (Pyramid) and fold edges of tin of tin foil close. Place in freezer.
  • Before serving, cover with cream, icing or melted chocolate. Sprinkle with flake. Serves 6-8
