Pyramid Cheesecake

This tempting dessert will keep in a freezer for up to 3 months.
- 125 grams Margarine
- 125 ml Sugar
- 1 Egg
- 250 ml Smooth cottage cheese
- 10 ml Vanilla essence
- 1 pkt Tennis biscuits
- 12-15 Cherries
- 150 ml Sweetened whipped cream or icing
- 1 Flake
Cream margarine and sugar together in 2 L Mix-N-Stor. Add egg and beat well. Add cheese and vanilla essence. Mix well.
Take a large sheet of tin foil and place 3 biscuits across x 4 down (12 in total). Spread with half of cheese mixture.
Add another layer of biscuits (12) and spread with balance of the mixture. Place a row of cherries down the centre.
Using the tin foil, fold into a triangle (Pyramid) and fold edges of tin of tin foil close. Place in freezer.
Before serving, cover with cream, icing or melted chocolate. Sprinkle with flake. Serves 6-8
