Ever So Simple Mango Ice-Cream

Concentrated mango juice

Choc-Kits biscuits, crushed

Butter, melted

pecan or walnuts, chopped

vanilla ice-cream
Instructions
Allow the concentrated mango juice to thaw.
Soften ice-cream and add mango juice. Mix well.
Pour mixture into an oiled Jel-ring and Tri-Jel mould with flower seal. Freeze for 1 hour.
Mix the biscuits, 100 ml of nuts and butter together.
Place biscuit mixture on top of ice cream, seal and freeze overnight.
Turn out and decorate with remaining nuts, kiwi fruit or pureed mango.
Notes
You can also use 4 Snack Cups in place of the Tri-Jel Mould, for the individual portions.
