Bobotie

This is an adapted Bobotie recipe, it is quick, easy, uncomplicated and delicious.

Ingredients
  

  • 500 gm mince
  • 2 slices of white bread
  • 1 Tbs curry powder
  • 1 onion diced
  • 1 cup beef stock
  • 20 ml sugar tablespoon
  • 2 eggs
  • 1 bay leaf
  • Salt
  • oil for frying

Instructions
 

  • Soak the bread in 1/2 cup stock. Fry the onion with the curry, sugar, salt and bay leaf.
  • Add the meat to bread and then the onion mixture. Beat 1 egg and mix with the stock and add to the mince mixture.
  • Spoon the mixture into an oven proof dish and beat the second egg and pour over the top.
  • Bake at 200C for 30 minutes.
  • Serve with basmati rice.
