Chicken and Rice Soup

Delicious soup for winter!

Ingredients
  

  • 15 ml Vegtable Oil
  • 2 onions diced
  • 5 ml mild curry powder If you like spicy then use a strong curry
  • 2 litres chicken stock use cubes or powder or make your own
  • 240 ml diced celery
  • 240 ml diced carrots you can use frozen
  • 2 chicken breasts diced
  • 240 ml mayonnaise
  • 480 ml cooked rice

Instructions
 

  • Heat the onion in a pan and fry the onion until soft, Add the curry powder and mix well.
  • Add the chicken stock, celery, carrots and chicken and bring to the boil, reduce heat and simmer, uncovered for 10 minutes. Stir in the mayonnaise and rice. Pour into a wide-mouth flask and seal.
